Summer Splendour

AGRICULTURE & LOCAL PRODUCE

THE BEST IN THE WORLD

Locally produced items from the Niseko and Kutchan area are recognised throughout Japan and right across Asia. The prefecture of Hokkaido support extensive farming due to its large size, relatively small population and favorable soil and climate, producing almost ten times as much wheat as any other prefecture. Locals say the extreme climate and difference in temperature between day and night also increase the flavour profile and sweetness in fruit and vegetables. Fresh products are available throughout Niseko and Kutchan.

HARVESTING MONTHS

Potatoes (early August ‐ October)
Niseko / Kutchan area is one of the top producers of potatoes in Hokkaido, earning itself the reputation “potato kingdom”. The popular kinds are Danshaku and Kita‐akari.

Asparagus (early May ‐ late June)
After the thaw, Niseko’s spring produces the season of tasty traditional green and white asparagus.

Beans edamame (August ‐ September)
Soy beans, red beans, black beans, kidney beans, navy beans and many more! Niseko grows a large variety of beans.

Soba (late September ‐ October)
From July to August, soba fields are fully covered by white flowers. In Niseko and around the foot of Mt. Yotei there are many handmade soba noodle restaurants where visitors can enjoy different recipes.
